Piccola azienda fondata nel 1974 da Pascal Simart, vignaiolo di terza generazione, di 3,8 ettari piantati con sole uve Grand Cru, di cui 3,4 piantati ad uve Chardonnay nei comuni di Cramant e Choully ed il resto a Pinot Nero nel villaggio di Ay, villaggio famoso per la potenza delle sue uve. Tradizione di Pascal è di fare una leggera sovra maturazione in pianta di piccoli lotti di Charonnay, caratteristica che poi ritroveremo nei piacevoli profumi e nell’eleganza dei suoi vini.
