Cerasuolo d'Abruzzo 'Spelt' La Valentina is produced exclusively from the eponymous grape, grown in the municipality of Spoltore at 150 meters above sea level, with a south-southwest exposure, in very compact soil that ranges from clayey limestone to silty clay towards the coast. Maceration on the skins takes place for approximately 18 hours, followed by a draining of the must and slow fermentation at a controlled low temperature in stainless steel. It is aged in stainless steel for four months and bottled in March without fining or forced stabilization.
