Chianti Classico San Giusto a Rentennano is made from 95% Sangiovese and 5% Canaiolo grapes, hand-picked when perfectly ripe and fermented in enameled concrete and/or stainless steel tanks for approximately 14 days, during which time several pumpings over and punching down are performed. After racking, the pomace is pressed in a horizontal press, and the pressed wine is returned to its original state. Malolactic fermentation is aided by heating the storage area. Racked several times (dregs), it ages in oak barrels, tonneaux, and barriques for approximately 10-12 months. Once bottled, it ages for another 6 months before being released for sale.
