The Fiano 'Trentenare' San Salvatore is a 100% Fiano harvested by hand in small plastic crates. The grapes are crushed and destemmed, brought to 4°C and cryomacerated for 6 hours. After fermentation in steel vats at very low temperatures, it ages for 6 months on its fine lees.
