The Zampaglione winery's Fiano Don Chisciotte is produced with long maceration on the skins outside the traditional area, in Calitri, at an altitude of 800 meters. It is produced by a historic cereal-growing company in Alta Irpinia. After converting to agritourism 20 years ago, one of the first in Southern Italy, and developing its agritourism business, it has invested, with the support of the new generation, to restore its winemaking potential to production. A single grape variety: Fiano, grown on high hills (about 800 meters) on poor soil. Fiano was already being grown near Calitri in the 19th century under the name Santa Sofia. Production was considered quantitatively modest but qualitatively high. The winery, as is tradition, is managed directly by the owners, headed by Pierluigi Zampaglione.
