The name of the wine harks back to the historical roots of . Hebo was in fact the name of an Etruscan settlement of very ancient origins. Hebo is produced from the Cabernet Sauvignon grape, combined with the . The production method is strictly aimed at preserving the territorial connotation: the grapes are harvested when fully ripe (late August - mid-September) and transported in crates with a capacity of no more than 17 kg; fermentation is carried out with indigenous yeasts and the vinification takes place in steel tanks at a controlled temperature. Aging takes place in Slavonian oak barrels, while a small portion evolves for 10-12 months in oak barriques (second and third passage) from the Massif Central of France, followed by a period of aging in steel before bottling. The evolution period is followed by 6 months of aging in bottle.
