Tasca D'Almerita's Malvasia 'Capo Faro' is produced exclusively with Malvasia grapes grown on the island of Salina, where the leaves are the first to care for the berries. On Capofaro, the sun is scorching, and the delicate Malvasia grape is preserved by its foliage, which resembles a cap. This preserves its aroma. After harvest, the grapes 'rest' in a dry, shaded place to achieve the right level of dehydration. The result is a fragrant, dense, yet not cloying wine, thanks to its balanced acidity.
