Paolo and Noemia D'Amico's 'Notturno dei Calanchi' Pinot Noir is produced exclusively with Pinot Noir grapes in a strip of land on the border between Umbria, Upper Lazio, and Tuscany, at an altitude of 550 meters above sea level. It is aged in first-, second-, and third-use French oak barriques for 10 months, followed by a further 10 months in bottle. It pairs perfectly with any dish, from the finest cuisine to the classic cheese pairing.
