Bortolomiol Prosecco Superiore Brut follows the classic production process of the finest Valdobbiadene DOCGs. Soft pressing of the whole grapes is followed by slow fermentation using carefully selected yeasts at a temperature of 10°C (50°F). Aged on the fine lees for four months, the sparkling wine is fermented according to the Charmat method: secondary fermentation in an autoclave at 15-16°C (59-60°F), cold stabilization at -1°C (30°F), and microfiltration before bottling to separate the yeasts from the sparkling wine.
