The Sylvaner ''R'' Köfererhof is produced from the eponymous grapes grown in vineyards located in the municipality of Varna, in the province of Bolzano. The grapes are harvested towards the end of October and then fermented in large barrels at a controlled temperature of approximately 18°C. The wine then ages on the fine lees for 6 months.

The Sylvaner Riserva R' Kofererhof comes from vineyards located over 650 meters above sea level in Varna, in the Novacella area of the Isarco Valley, the northernmost wine-growing area in Italy. The Kofererhof winery is located on an old 17th-century farmhouse, recently renovated. It ferments in stainless steel, then in May it is left in oak barrels for two or three months on the fine lees.
