Vin Santo Di Montepulciano 'Occhio Di Pernice' Avignonesi 2010

Avignonesi's Vin Santo di Montepulciano Occhio di Pernice is produced exclusively with the finest Sangiovese grapes, dried for many months on bamboo mats in the appassitoio. The Vin Santo is then aged for a decade in small barrels and owes part of its special character to the madre, an indigenous yeast over a hundred years old, jealously guarded by Avignonesi. Thanks to the 10-year aging in wood, during which the Vin Santo Occhio di Pernice is subjected to a natural oxidation process, the wine's qualities remain intact long after the bottle is uncorked.
