Col d'Orcia's Brunello di Montalcino is, by the producer's express wish, a traditional Brunello di Montalcino. The decision to continue using Slavonian oak barrels was made many years ago, well before the debate between modernist and traditionalist producers began. Tradition means respect for the essence of Sangiovese, which lies in its aging potential, in the improvement of the wine through long aging in wood and subsequent aging in the bottle. Even today, at Col d'Orcia, Brunello di Montalcino is aged for three full years in large oak barrels before bottling and is kept in the cellar for a year before being released.
