Ciro Picariello Fiano is produced in Summonte, located at 650 meters above sea level, and in Montefredane, located at 500 meters above sea level. The grape variety is 100% Fiano. The grapes are hand-picked and undergo rigorous selection in the cellar, where they are pressed directly. The must is chilled to 8°C for 24 hours. Fermentation is always controlled at around 12–13°C for 60 days. Aged in stainless steel tanks with frequent batonnages for 10 months. Bottled for 3 months before release. Typical nose, with notes of peaty, hay, white flowers, and flint. Powerful and mineral.
