Fu nel 1896 che Eugene Billiot, mugnaio professionista ad Ambonnay, investì nei vigneti quando arrivò l'elettricità. Ambonnay, uno dei 5 migliori grand cru della Champagne, si trova nel cuore della Côte des Noirs, sulle pendici meridionali della Montagne de Reims: le sue colline sono rinomate per la ricchezza dei loro Pinot Nero e Chardonnay.

I vini della Maison Billiot sono prodotti in modo tradizionale, senza fermentazione malolattica né filtrazione, con una produzione di circa 32.000 bottiglie all'anno.
