Grapes are harvested at the perfect level of ripeness. A portion of the destemmed and crushed grapes is gently pressed; the other portion is first fermented at 4°C for approximately 36 hours. The resulting liquid is cold-decanted and then a fermentation starter, prepared 3-4 days earlier, is added, made from the finest grapes of the same variety. It is then slowly fermented in stainless steel tanks at a constant temperature (16°C) for approximately 30-40 days. The maturation continues in tanks, where a long series of staggered fermentations also takes place, resulting in a complex, structured, and delicately scented wine. Bottling will take place in February.
