It was invented in 1868 by Girolamo Varnelli, who drew on his extensive herbal expertise to create a liqueur that reflected the flavors of his homeland and offered relief to farmers engaged in transhumance.

Amaro Varnelli Sibilla is a traditional herbal liqueur of great value. It was invented in 1868 by Girolamo Varnelli, thanks to his extensive knowledge of herbalism. The aim was to create a product that could sustain shepherds engaged in transhumance, warming them on cold nights away from home. Even today, this amaro is produced following the original recipe, made from a wood-fired decoction of gentian and other medicinal plants. Before bottling, it is sweetened only with honey from the Sibillini Mountains and is aged for a long time and filtered through a cloth.
