Montelobos Espadin Mezcal is a craft spirit produced in Santiago Matatlán, Oaxaca, from 100% certified organic Espadin agave. Produced exclusively in the Joven version, Montelobos uses agave grown by the Lopez family in the shadow of the Lopez mountain range (Mexican for 'wolf mountain') in the Sierra Madre. After the plant has grown for at least 10 years and is harvested by hand with a machete, selecting the mature plants based on the color at the base of the cone, the agave is transported to the palenque to begin cooking in traditional underground stone ovens for 4-5 days. The subsequent milling using a traditional stone mill called a tahona is carried out using animal power: a mule called Rambo. The resulting aguamiel is fermented in open-air terracotta vats, using only indigenous yeasts, for an average of about a week—slightly shorter than other mezcals—to better highlight the agave's intrinsic vegetal aromas and prevent the smoky flavors from overpowering. The resulting fermented liquid, called tepache, is double distilled in a copper pot still.
