Franciacorta Mosnel Brut is made with Chardonnay, Pinot Blanc, and Pinot Noir grapes. After nearly 24 months on the lees, the Brut reaches its equilibrium and is ready for disgorgement. Vinification is done without the skins, using a pneumatic press with separation of the first and second pressings. After 12 hours of decantation at 15°C, selected yeasts are added for fermentation, partly in temperature-controlled stainless steel tanks and partly in small oak barrels. Malolactic fermentation and racking precede the blending of the cuvée, which is then bottled in the spring, sealed with a crown cap, and stacked horizontally for secondary fermentation. The stacked bottles remain in our cellars for at least 24 months before remuage. Subsequently, disgorged and dosed as 'Brut,' they are given a mushroom cork and wire cage. Finally, at least two months of further refinement is necessary before placing this Franciacorta on the market.
