Franciacorta 'Parosé' Pas Dosé Mosnel is produced from a blend of Pinot Noir and Chardonnay. Only the first fraction of juice (the first fraction) is used for Franciacorta 'Parosé', which owes its light color to the Pinot Noir, which undergoes light skin maceration. Primary fermentation takes place in small oak barrels (225 liters), which house the wine for six months, until the following spring. Blending and bottling with tirage syrup precede stacking for secondary fermentation in the bottle. The stacked bottles remain for a minimum of 36 months in the 17th-century cellars before riddling. Subsequently, disgorged and dosed, 'Pas Dosé' receives a mushroom cork and wire cage. It is then aged for a further six months before being released to the market.
